Cheesecake Recipe

This is where it all began - and the one recipe you must try. I hope you enjoy it, and let me know how it turns out for you.

Ingredients:
24oz Fat Free or 1% cottage cheese
1 - 1 1/2 cups Splenda for baking (or other sugar substitute)
1 tsp vanilla
1 tsp lemon juice
One of the following:
2 tsp cocoa powder
4 tbsp PB2 (powdered peanut butter from http://www.bellplantation.com)
1/4 c Key Lime Juice
2-3 Cups fruit -strawberries, peaches, cherries, etc...


Directions:
Throw it all in a blender / food processor and blend until smooth. Eat like pudding


Counts:
3/4 cup = 3 servings protein if you don't use fruit, 2 servings protein and 1 serving fruit if you do use fruit

Welcome to my recipe blog!

This blog came out of my need to survive my diet. I am working with a weight loss doctor, and my diet is very limited. It consists mainly of lean protein, with some vegetables and fruits, but all of them low glycemic. The problem is this: I love to eat. My tastebuds didn't agree to go on a diet, and they still demand some satisfaction.

After the first week on my program, I knew I needed to find some recipes or I was going to get bored very fast. I looked all over the internet, and found lots of low carb recipes, but they were high in fat. I also found a lot of low fat recipes, but they were all high in carbs.

I've been a cook all my life, and I enjoy cooking. I do my best when I don't have a recipe - so I decided to just start coming up with some ideas of my own.

As the collection grew, I started sharing it with a few people, and soon realized there was a need for a cookbook out there.

I have assembled a small collection of recipes that I plan to expand. These recipes will help you stick to your plan while allowing you to enjoy your food.

I plan to post tips and tricks here, as well as helpful links, and a few recipes.

I welcome your feedback, and would love to have your input. If you have tips you have learned or other recipes I haven't discovered, please share them with me. If I publish your tip or recipe, you will receive full credit, and I'll send you a copy of the new edition.

To date, I am down 23 pounds in 9 weeks on my program, and a total of 47 pounds from 2 years ago.

I hope I can provide you with some ideas that will help make your weight loss journey enjoyable as well as successful.
